Chop & Simmer
Step 2
Once you’ve gathered all your ingredients, chop your onions and garlic. Next, place them in a pre-heated pot of olive oil or avocado oil and briefly sautée until fragrant . You may add your turmeric and curry powder at this stage, be generous, but do not add any salt. You may, however, add any additional non-salt seasonings you wish.
Step 3
Next, throw the lentils into the pot and add the spring water. Be sure to turn your lentils down on the lowest temperature setting as they need to simmer slowly. This allows the lentils to soften and soak up the seasonings. You will want to monitor the water levels at this stage and be prepared to add additional water if the lentils are not yet soft. This stage can take up to 30 minutes or more.
Step 4
Now, your lentils should be soft. Here’s the fun part. You can now add your onion powder, salt, and creole seasonings. Add a small amount of salt at first as your lentils will soak up the salt as they simmer for the duration of the cook time. It is very easy to over-salt your soup and ruin the taste. The reason you must wait to add salt is that salt will keep the lentils from softening. Additionally, you may add extra curry and turmeric if you wish. Let the soup simmer for another 30 minutes to an hour.
